1. Bread Poha

This recipe is a delicious alternative for the traditional poha which is a typical breakfast snack in a number of Indian households. What’s more, preparing this yummy snack is a matter of a few minutes.

So, here we go…

  • Bread slices: 8-10 slices
  • Onions: 1 (medium – sized), chopped
  • Tomatoes: 1 (medium – sized), chopped
  • Peas: A handful
  • Seasonal Vegetables (such as French Beans, Capsicum, Carrot etc.): 1 bowl, chopped
  • Green Chillies: 1-2
  • Oil : 1-2 tablespoons
  • Mustard seeds
  • Curry leaves: 6-8
  • Peanuts
  • Turmeric Powder
  • Red Chilli Powder
  • Sugar – 1 teaspoon
  • Coriander leaves
  • Lemon Juice
  • Salt to taste

Take some slices of bread and scramble them finely (you could even grind them in a grinder; the finer, the better). You can replace white bread with multigrain or brown bread so as to make it healthier.

Heat oil in a pan and add some mustard seeds. Wait for the mustard seeds to start crackling and when they do, add some curry leaves and finely chopped onions. Sauté on a medium flame and thereafter, add chopped green chillies.

Time to add turmeric powder and red chilli powder now.

Next, add peas and chopped vegetables like Capsicum, Carrot, finely chopped French Beans. You can take any vegetable of your choice to lend it that special flavour of your liking.

Add salt to taste and one teaspoon of sugar. Now add peanuts and sauté for a while. Sprinkle some water, if needed.

Now mix the scrambled bread and cook on a medium flame. Stir the mixture occasionally, as and when required.

Let the finely chopped tomato pieces also join the feast (they not only make the dish tastier but also impart that bright red colour to it).

Mix well and take it off the flame.

Finally, garnish with chopped green coriander leaves and pour a few drops of lemon juice for that tangy twist and with that, a mouth-watering, colourful and healthy platter is ready to rock your dining table.

2. Bread ‘Tawa’ Pizza

Just in case ordering a pizza from the market leaves you worrying about it burning a hole in your pocket, this might just be the recipe for you.

This one tops my list of the most preferred Sunday morning breakfasts, partly because it is a pizza made at home and more so because it lets me get past the worry of preparing a pizza without an oven. What’s more, the Bread ‘Tawa’ Pizza lets you customize the toppings to your liking.

So, let’s get started…

  • Bread slices: 8-10
  • Onions: 1 (medium – sized), chopped
  • Tomatoes: 1 (medium – sized), chopped
  • Capsicum: 1 small, chopped
  • Cream (Malai): 2 teaspoons
  • Semolina (Sooji): 1 teaspoon
  • Cheese slices
  • Black Pepper Powder
  • Oregano
  • Chilli Flakes
  • Salt to taste

Mix chopped onions, capsicum and tomatoes in a bowl to prepare the topping. You can also add corn, cheese (paneer), mushrooms and olives as per availability and your taste.

Mix together cream and semolina along with salt and pepper to make a thick paste. This paste helps bind the ingredients of the topping together and keeps it from scattering. Add this paste to the topping in the bowl and mix well.

Now add chili flakes and oregano to the mixture.

Heat the bread slices on a tawa for a while and then place a cheese slice on each piece of the mildly – heated bread. Let these bread pieces continue to be heated till the cheese starts to melt.

Now carefully spread the topping paste on the bread slices above the melted cheese and make sure you spread the paste uniformly.

Toss the bread slice carefully and let the other side be uniformly heated for a little while.

Finally, take it off the flame and serve hot with tomato ketchup.
